Some of the most diverse dining in the Caribbean can be found in the U.S.
Virgin Islands. …The fresh local tuna, wahoo, and mahi, as well as the
excellent tropical fruits and vegetables, become elements of creativity in the
hands of extraordinary chefs like Aaron Willis, a native who presides over the
Fish Trap and the Stone Terrace in St. John. Willis’s serene sense of place is
gracefully expressed in culinary combinations such as macadamia and
tamarind-encrusted pork on mashed plantains, and charcoal grilled tuna with a
soy glaze and wasabi mayonnaise. It’s a style he calls "island imaginings." As
a chef who grew up on the island, went to the Culinary Institute of America in
Hyde Park, New York, and apprenticed in California before returning to his
roots, Willis proclaims that his ambition is "to bring home the rest of the
world."

"At first we were recommended to go to XXX’s for dinner, but upon our
arrival, someone else had discovered the treasure. Fortunately for us,
St. John has many other treasures and headed up the road to the Fish
Trap Restaurant. Our meal was fantastic, especially their award-winning
coconut cake with caramel-rum sauce. We were full, but we were convinced
that we could no leave without tasting it. We ordered one for everyone
to taste. However, one was not enough, we had to order another one. It
was exquisite.
